Any straight chain monocarboxylic acid, especially those naturally occurring in fats. Fatty acids are classified as saturated or unsaturated; the latter are further classified as polyunsaturated or monounsaturated. The absolute and relative amounts of the various fatty acids consumed have been linked to plasma lipid levels, atherosclerosis, and coronary artery disease.
